Château Ollieux Romanis is located in the commune of Montseret in the heart of Boutenac wine growing region. During the middle age, the monks of the nearby Fontfroide Abbey developed their own winemaking and growing techniques, continually improving the quality of the wines and consolidating their “savoir faire” in the region.
The Bories family first settled in Les Ollieux in the mid-19th century and created the estate that is known today. Through Pierre Bories’ love of wine and land, the domaine continues to evolve – the modernization of equipment and refinements in technique are in accordance with the innovative tradition of the monks. With 150ha of vineyard, the Bories family cultivates one of the biggest private domaine in the Corbières. Pierre chose to cultivate the vines in “lutte raisonnée”; weed killer or chemical fertilizer are not applied, instead he utilizes compost made of marc. In winter, a herd of sheep can often be seen grazing in the vineyards. Full conversion to organic culture is the goal.

Vinification: Pellicular maceration for 3 to 6 hours, pressing. Fermentation at low temperature.
Tasting notes: Pale pink color with light purple hues. Small red berries and pink grapefruit aromas. Elegant palate, with a balance of freshness and roundness.
