Harvest method: grapes are hand-picked and collected in small cases.
Vinification: once in the cellar, grapes are manually selected in the rolling tape before de-stemming and pressage. Fermentation takes place under the highest control, in order to obtain the maximum result from the extracting phase, with délestages and circulation pumping, to extract color and fruitiness from the skins. Fermentation is done under controlled temperature between 27° and 31° C, to preserve as much as possible the original aromatic qualities of the fruit. A fter the alcoholic fermentation is finished, the wine is transferred into French oak barriques, where the malolactic fermentation takes place. At the end of the ageing in barrique, the wine is bottled after a careful tasting.
Barrel ageing: 18 months in 225 L barriques.
Cellar life: to drink now until the next 20 years and more.
TASTING NOTES
Deep ruby red in color, complex, rich bouquet, complemented by sweet, dense tannins and a lively acidity. On the nose it is powerful with scent of undergrowth black fruits ending with vanilla, spicy aromas of tobacco and light balsamic notes. In the mouth it is smooth, warm and velvety with a very long finish. A ll its components are in perfect harmony, creating a wine of remarkable structure.
Alcohol: 14,5% Vol. Serving temperature: 16-18° C.
