WINE ESTATE
Chateau Cadillac dates back to the 17th century (one of the oldest in Bordeaux), and overlooks a majestic estate covering 75 hectares spread out over three levels. This estate is located only 2 miles west from Fronsac. The Cuvée “JJ Lesgourgues” is produced on only 25 hectares from the very old grapes that grow in the slopes and the highest points surrounding the Chateau.
SOIL
Chalky clay soils on limestone bedrock. Typical hillside wines for a perfect combination of the rich tones characteristic of the Saint-Emilion and Fronsac areas.
GRAPE VARIETY
• 70% Merlot
• 30 % Cabernet Sauvignon.
• Both grapes are high density planted: 5.500 vines/ha, old vines with limited yields: 40 Ho / Ha.
VINIFICATION
• Destemming of the harvested grapes – 3 weeks maceration – Fermentation at between 82° and 86°F (malolactic fermentation). Daily pumping over – Maturation in French oak barrels for 12 months (1/3 new barrels).

FOOD PAIRING
• This wine is perfect to drink with red meat, T-bone, strong flavored cheeses.
• This wine will beautifully age for 10 years and more.
TASTING NOTES
• Shiny ruby red color.
• Intense nose of spicy aromas with notes of pepper, cinnamon and red berries.
• Oak flavors with notes of cocoa and toasted bread.
• Soft on the palate with vanilla and toasted aromas.
• Round mouth with silky tannins on the finish. Great length on the palate.
