Viticulture and Vinification
Old-vine, high-altitude Nerello Mascalese and Nerello Capuccio are hand-harvested on the steep slopes above the historic Torrepalino cantina on Etna’s northeastern flank. Vines thrive there in basalt-rich soil. Grapes are fermented in stainless steel using selected yeast and aged for up to eight months in Slavonian oak botti.
