Viticulture and Vinification
The varieties that make up Campo Vecchio Bianco are grown in separate blocks at up to 270 m. above sea level on the Santarelli estate southeast of Rome. They are picked and vinified separately. All varieties undergo fermentation in temperature-controlled stainless steel with selective, partial malolactic fermentation. The components are then blended and bottled.
