Viticulture and Vinification
100% Merlot is grown under contract to Ronco dei Tassi by farmers in the Collio appellation. Vines are up to 30-yearsold. Fruit is rigorously selected and hand-harvested. The must undergoes 8-days maceration and is fermented using selected yeasts in temperaturecontrolled stainless steel. The wine is aged for 10-months in stainless steel before bottling.
