Long Island, New York. Produced and bottled in Sagaponack, New York. Under Winemaker/Technical Director Roman Roth’s meticulous care, Wölffer Estate Vineyard encompasses 55 acres and practices sustainable agriculture. Similar in many respects to conditions in Bordeaux, the local Bridgehampton loam soil, combined with the breeze from the Atlantic, only 2.6 miles away, provides the perfect conditions to achieve the ripeness and acidity necessary for producing Wölffer’s signature style: European elegance combined with the typicity of their Long Island terroir.

Style/Taste
Dark Red in color. Wonderful aromas of ripe blueberries and blackberries with hints of vanilla, sandalwood, toasted oak and graphite. The mouth-feel is classic, with black currants, licorice, layers of ripe tannins and great minerality. The Merlot provides a rich and lush base while the Cabernet Sauvignon and Petit Verdot add great structure, balance and elegance. This blend is the perfect complement to food and will have great aging potential.
Technical Data
After the best growing season on record, the fruit was wonderfully ripe, healthy, fresh and vibrant, resulting in grapes with high sugars and perfect balance and fresh and vibrant, resulting in grapes with high sugars and perfect balance and finesse. Most importantly, the flavors were ripe and the fruit was mature. The lush grapes were handpicked at the end of October. As always, careful selection was carried out in the vineyard and on our sorting table. The healthy grapes were destemmed and cold-soaked at 50F for 4 days, followed by a warm fermentation (85F) that completed in 15 days. We did 3 pump overs a day during peak fermentation. The grapes were pressed very gently, and the free run juice was separated from the press fraction. 100% of the wine finished malolactic fermentation in French oak barriques (10% new oak). The wine was not filtered or fined and only had 5 rackings. It was bottled on March 26th 2012, producing 838 cases 750ml bottles.
