Viticulture and Vinification
Fruit from 10-25 year old vines planted in several vineyards in Castiglione Falletto is hand harvested. Vines are pruned for low yield. Viticulture is sustainable with minimal treatments, cover crops and cultivation of beneficial insects. Fermentation using selected yeast is done in temperature-controlled stainless steel with a ten-day maceration. The wine rests in 30hl Slavonian botti for atleast six months before bottling.
